A friend asked me to make this for her and I am glad I did!!  Potatoes cooked in chicken broth, sautéed carrots, onion and celery all pureed into a smooth velvety soup! Seasoned with my favorite Cajun seasoning which gives this soup depth!  Served with cheese and bacon to garnish!  Reheats from refrigerated but can easily be stored frozen as well.
